How do I set the default SMTP address for an account in Exchange Online?

Modifying the SMTP addresses for a mailbox in Office 365 has to be completed on-premise through the ECP (http://owa.ucdavis.edu/ecp/). Accessing the on-prem ECP requires you to access the site from an on-campus IP address.
